When brewing coffee, most people focus on grind size, water temperature, or brew time. Yet one concept has a greater impact on cup quality than almost any other: uniform extraction.
Understanding uniform extraction can completely change the way you brew espresso, pour-over, or French press coffee.
During brewing, hot water dissolves hundreds of soluble compounds from roasted coffee.
Some contribute sweetness, aroma, and complexity, while others create bitterness, dryness, or vegetal flavors.
The goal is to extract as many desirable compounds as possible without over-extracting the less pleasant ones.
However, coffee is never extracted perfectly evenly.
Every dose of ground coffee contains thousands of individual particles.
Although they appear similar, each particle differs slightly in size, shape, density, and internal structure.
As water flows through them, each particle extracts at a slightly different rate.
