Why Coffee Pre-Infusion Matters for Espresso and Pour Over Brewing

Pre-infusion (or blooming in filter brewing) is one of the most important steps in achieving a balanced and even extraction. Although it is commonly associated with specialty coffee, its role varies depending on the brewing method.

In pour-over methods such as the V60 or Kalita, pre-infusion helps prevent channeling and improves extraction uniformity. In espresso, low-pressure pre-infusion reduces the movement of fine particles and promotes a more consistent extraction.

Pre-Infusion and Channeling

If you skip the bloom when brewing filter coffee, some coffee particles become wet before others.

Water naturally follows the path of least resistance, flowing through already saturated areas and creating preferential channels.

As a result:

  • some particles become over-extracted;
  • others remain under-extracted;
  • overall extraction becomes uneven.

Once channeling develops, it is extremely difficult to eliminate completely, even with agitation.

How Pre-Infusion Improves Extraction Uniformity

We can imagine two different types of coffee particles:

  • particles without intact cell structures;
  • particles that still contain one or more intact coffee cells.

Most soluble compounds and coffee oils are stored inside these cells.

Small particles release their compounds almost immediately because their entire surface is exposed to water.

Larger particles require more time, as water must first penetrate the cell walls before dissolving the compounds inside.

Pre-infusion starts this diffusion process before the main extraction begins, reducing differences between particles and producing a much more even extraction.

Does Pre-Infusion Increase Extraction?

Saying that pre-infusion simply "increases extraction" is not entirely accurate.

What it really does is extend the contact time between water and coffee.

Longer contact naturally allows more compounds to dissolve, but the primary purpose of pre-infusion is not to produce a stronger cup—it is to improve extraction quality, balance, and consistency.

Pre-Infusion in Espresso

Espresso pre-infusion serves essentially the same purpose as blooming in filter coffee.

Ideally, brewing begins at almost zero pressure with a very low flow rate (around 2–3 ml per second), increasing pressure only after the coffee puck is fully saturated.

This provides several advantages:

  • reduces channeling;
  • prevents fine-particle migration;
  • improves extraction uniformity;
  • allows a finer grind without significantly increasing the risk of over-extraction.

The result is often a sweeter, cleaner, and more complex espresso.

Some modern machines, such as the Decent Espresso Machine, feature intelligent pre-infusion systems that automatically detect when the puck is fully saturated before gradually increasing pressure.

Other machines use fixed or very short pre-infusion stages that often provide little practical benefit.

Pre-Infusion in Immersion Brewing

In immersion methods such as the French Press, the value of pre-infusion is far more questionable.

Imagine brewing two French Press coffees using a 17:1 brew ratio at 95°C.

One recipe includes a 45-second bloom using a 2:1 water-to-coffee ratio, while the other adds all the water immediately.

Although both brews share the same total extraction time of four minutes and thirty seconds, some particles begin extracting earlier during the bloom phase.

Some interact with clean water (low TDS), while others are already surrounded by water containing dissolved coffee compounds.

This creates differences that reduce extraction uniformity.

Pre-infusion also removes a considerable amount of heat from the brewing water.

For example, mixing 20 g of room-temperature coffee (25°C / 77°F) with 40 g of water at 95°C (203°F) immediately lowers the average temperature to approximately 72°C (162°F), significantly affecting extraction.

But Why Do Some Recipes Still Use Pre-Infusion?

Some of your best immersion recipes may include a bloom.

Several Brewers Cup champions use it as well.

That does not necessarily mean it is the most repeatable technique.

The real question is not whether it can produce an excellent cup—it certainly can—but whether it consistently delivers the same result.

Conclusion

Great coffee depends primarily on two things:

  • uniform extraction;
  • stable brewing temperature.

From this perspective, pre-infusion is an extremely valuable tool in percolation methods such as V60, Kalita, and espresso.

Its benefits in immersion brewing, however, are far less convincing and may even introduce additional variables that reduce consistency.

The best approach is to experiment.

Try brewing with and without pre-infusion, adjust grind size and water temperature, compare the results, and keep detailed notes.

In specialty coffee, curiosity and precision are always rewarded.
