When dialing in an espresso, most baristas focus on grind size, dose, and extraction time. Yet one variable can dramatically change the final cup: brewing temperature.
Changing the water temperature by just one degree can alter sweetness, acidity, bitterness, and aroma. However, the relationship between temperature and flavor is far more complex than simply "hotter is better."
Before adjusting brewing temperature, it's important to understand that every espresso machine responds differently.
Modern multi-boiler machines maintain highly stable temperatures and offer precise control. Older heat-exchanger or single-boiler machines, however, may deliver slightly different temperatures between group heads or fluctuate during service.
As a result, increasing the temperature setting by one degree doesn't necessarily mean the coffee is brewed one degree hotter.
Understanding your machine is the first step toward consistent espresso.
The machine isn't the only factor affecting brewing temperature.
One often-overlooked variable is ground coffee temperature.
Grinding generates friction, and during busy service the coffee can easily warm from room temperature to over 50°C (122°F). This changes the effective brewing temperature and may require adjustments.
Extraction time also matters.
Longer extractions allow more heat to dissipate into the coffee puck, portafilter, and surrounding environment, gradually reducing the effective brewing temperature.
This explains why changing the machine setting by just one degree doesn't always produce the expected result.
As a general rule, higher temperatures increase extraction speed.
Most coffee compounds dissolve more easily in hotter water, allowing more material to be extracted in less time.
There is, however, one important exception.
Gases—especially carbon dioxide—become less soluble as temperature rises. Since carbon dioxide affects water flow through the coffee puck, it also influences espresso extraction dynamics.
Even so, scientific research consistently shows that increasing brewing temperature generally increases extraction.
Two espressos can have exactly the same extraction yield while tasting completely different.
Why?
Because brewing temperature changes not only how much is extracted but also which compounds are extracted.
Different groups of coffee compounds respond differently to heat.
Research has shown that increasing brewing temperature changes the balance of extracted compounds.

Just a few degrees can dramatically reshape an espresso's aromatic profile.
At higher temperatures, certain coffee compounds begin to break down.
One important example is chlorogenic acid, which decomposes into caffeic acid and quinic acid.
These compounds contribute more bitterness and can reduce the perceived sweetness and balance of the espresso.
For this reason, simply increasing temperature does not automatically produce a better extraction.

The ideal brewing temperature depends on many variables, including:
Light-roasted coffees often benefit from slightly higher brewing temperatures to improve extraction.
Darker roasts usually perform better at lower temperatures to avoid excessive bitterness.
Finding the perfect temperature requires experimentation, careful tasting, and small adjustments.
Brewing temperature is one of the most powerful tools available for refining espresso. It affects not only extraction speed but also the balance of sugars, acids, aromatic compounds, and bitterness in the cup.
Even a one-degree adjustment can transform the sensory experience. Rather than searching for one "perfect" temperature, specialty coffee focuses on finding the ideal temperature for each individual coffee—unlocking its sweetness, clarity, and unique character through careful testing and tasting.
