This specialty coffee originates from the Muhazi region in Rwanda, an area known for its high altitudes, fertile soils, and ideal conditions for producing complex and expressive coffees.
Behind this lot is Emmanuel Rusatira, founder of Baho Coffee, and one of the key figures in shaping Rwanda’s specialty coffee landscape. His work connects thousands of smallholder farmers with innovative processing methods and high-quality standards, creating a meaningful impact within local communities.
This coffee is composed of the Red Bourbon variety, one of the most respected in Africa for its ability to deliver sweet, complex profiles with bright acidity. Grown at high altitude, the cherries develop slowly, resulting in dense beans and greater depth in the cup.
The anaerobic nature process adds another layer of complexity. During controlled fermentation in low-oxygen conditions, the coffee develops enhanced sweetness, aromatic intensity, and a silky texture. Careful drying then preserves clarity and balance in the final cup.
At The Blue Faro, we roast this coffee to highlight its natural character while enhancing its most vibrant qualities. The result is a juicy and expressive cup, featuring notes of strawberry and peach, complemented by creamy macadamia and a caramel-like sweetness.
